Strawberry cake

"A beautiful cake for the strawberry lover. Easy to make with packaged gelatin and white cake mix. Fresh strawberries can be used when they are in season."
INGREDIENTS:
1 (3 ounce) package strawberry flavored
gelatin
1/2 cup cold water
1 (18.25 ounce) package white cake mix
4 eggs
1 cup vegetable oil
3 tablespoons all-purpose flour
1 (10 ounce) package frozen
strawberries, thawed
6 tablespoons butter
2 cups confectioners' sugar
DIRECTIONS:
1.Preheat the oven to 325 degrees F (165 degrees C). Grease and flour three 9 inch round cake pans.
2.In a large bowl, dissolve the gelatin in cold water; stir in the cake mix, eggs, vegetable oil, flour and 1/2 of the strawberries. Beat for 5 minutes on the medium speed of an electric mixer. Divide the batter evenly between the prepared cake pans.
3.Bake for 30 to 35 minutes in the preheated oven, or until the layers spring back when lightly pressed in the center. Cool cakes in the pans on wire racks.
4.To Make Frosting: Cream the butter, sugar and the remaining half of the strawberries in a medium bowl until light and fluffy, adding additional confectioners' sugar if needed for a spreadable consistency. Spread the frosting between layers and over the top and sides of cake.

Reviewers tip:
This cake was so great it deserves 6 stars! Judging from what other reviewers said, I drained well and pureed the (unsweetened) strawberries. I added 1/2 cup of the puree to the cake batter and ONLY 2 TBSP of the puree to the icing, which comes out to a PERFECT spreading consistency. I made this in a 9x13 baking dish and the icing was the perfect amount to cover the top nicely. This is an absolutely great recipe, with the above modifications!

Moist Caramel Apple Cake or Cupcakes





I decided to try this recipe for caramel apple cupcakes but I used a caramel frosting 
I found and they were easy and so good!  Everyone had at least 2 or 3! I found this
recipe at Kraft Foods.
Moist Caramel Apple Cake recipe

what you need

1 pkg. (2-layer size) yellow cake mix
1 pkg.  (3.4 oz.) JELL-O Vanilla or French Vanilla Flavor Instant Pudding
1 cup water
4   eggs
1/3 cup oil
3   Granny Smith apples (1 lb.), peeled, coarsely chopped
20 KRAFT Caramels
3 Tbsp.  milk
I added some cinnamon and nutmeg to mine and didn't add the caramel
on top. Just frosting.

make it

HEAT oven to 350ºF
GREASE and flour 12-cup fluted tube pan or 10-inch tube pan. Beat first 5 ingredients
 in large bowl with mixer on low speed until blended. Beat on high speed 2 min.
Stir in apples.  Pour  into prepared pan.
BAKE 50 min. to 1 hour or until toothpick inserted near center comes out clean.
Cool cake in  pan 15 min. Loosen cake from side of pan; invert onto wire rack.
Gently remove  pan. Cool  cake completely. Transfer to plate.
MICROWAVE caramels and milk in microwaveable bowl on HIGH 1-1/2 min.,
 stirring every  30 sec. until blended. Cool 10 min. or until slightly thickened.
Drizzle ove cake.

Cooking Know-How
Do not use cake mix with pudding in the mix. To avoid soggy cake, drizzle caramel
 sauce
over cake just before serving.
Special Extra
Serve topped with thawed COOL WHIP Whipped Topping or vanilla ice cream.

Caramel Frosting


I was looking for a caramel frosting to go on some Caramel apple  cupcakes and this is what I made.  It was so YUMMY!  It tastes just like homemade caramel in a light and fluffy texture. I found this at Allrecipes.com

INGREDIENTS:
1 pound light brown sugar
1 cup heavy whipping cream
1/2 teaspoon baking soda
1/2 cup butter-room temp.
8 oz. cream cheese-room temp.
1/4 cup chopped pecans (optional)
DIRECTIONS:
1.In a medium, heavy saucepan, bring the sugar and cream to a rolling boil. Boil one minute. Add soda, and boil one more minute. Remove from heat. Let cool. ( I stick mine in the freezer to speed up the process.) Whip cream cheese and butter until fluffy.  Add caramel mixture and whip until light and fluffy.
2. Stir in pecans if desired.

I didn't have whipping cream so I used evaporated milk and it worked but it didn't hold it's shape like I would like.

STRAWBERRY CUPCAKES (Pie Filling Cupcakes)

 

I found this recipe at Colleens Recipes

Basically it is a dry cake mix + a 20 ounce can of fruit filling + 3 eggs. That's it! It produces an extremely moist and flavorful cake! You can use ANY dry cake mix and ANY canned fruit pie filling so the combinations are endless. Our favorite is chocolate with cherry pie filling but we've also thoroughly enjoyed chocolate cake with raspberry pie filling, spice cake with peach pie filling, spice cake with apple pie filling and yellow cake mix with lemon pie filling.


For the cupcakes posted today, I combined a box of BettyCrocker strawberry cake mix (ignore any directions on the box) with a 20 ounce can of Wilderness strawberry pie filling and three eggs. Beat on medium-high speed for about 2 minutes (batter will be a little thicker than you expect). Fill paper lined cupcake pans about 2/3 full and bake at 350 for 20 minutes. Oh so yummy!

NOTE: Don't worry about the "chunks" of fruit in the pie filling. When you mix it into the cake mix with your electric mixer, the fruit will break up (which is what you want).

NOTE: This recipe is not suited for white cake mixes for some reason. They taste good, but have a strange color after they are baked.
NOTE: The weight on most cans of pre-prepared pie filling is different...some cans are 18 ounces some are 20 ounces. This measurement doesn't seem to be crucial. Just get the size can closest to 20 ounces that you can find.
NOTE: This recipe works very well for sheet cakes as well as layer cakes. Just use the toothpick test for doneness instead of the baking times on the cake mix box. After you remove the cake from the pan, cover it tightly with plastic wrap and let it cool. Keep covered until you frost the cake.

Pumpkin Cupcakes



Preheat over to 350 F and line cupcake pans with liners

2 C all purpose flour
1 tsp baking soda
1 heaping tsp baking powder
1 tsp ground ginger
1.5 tsp ground cinnamon
1/4 tsp freshly grated nutmeg
1/4 tsp ground all spice
1 C packed light brown sugar
3/4 C granulated sugar
1 C salted butter
4 large eggs
15 oz pumpkin puree

In a bowl whisk flour, baking soda and powder, ginger, cinnamon, nutmeg, all spice. In another bowl whisk brown and granulated sugar with butter and eggs. Whisk in dry ingredients (be careful not to over mix!) and then add pumkin puree.
Pour batter into prepared cupcake pans and put it in the over for 20-25 minutes, rotating the pan halfway.

Rootbeer Float Cupcakes


  • Rootbeer Cupcakes
    • 1 (18 ounce) package yellow cake mix
    • 1/3 cup Rootbeer Soda Pop
    • 1/3 cup vegetable oil
    • 3 large egg whites
    • 1 cup sour cream
    • 1/4 Tsp Rootbeer Flavor Oil (or you can use one teaspoon rootbeer extract)
    1. Set oven to 325 degrees F (set oven rack to middle position).
    2. Mix all ingredients in a bowl on low speed until blended (about 30 seconds).
    3. Beat at medium speed for 2 minutes more.
    4. Pour the batter into a lined muffin pan.
    5. Bake for about 17 minutes or until cupcakes test done.

OR THIS RECIPE

1 white cake mix
10 oz. favorite rootbeer
3 eggs
1/3 c. oil or 1/2 c. butter-melted

Mix well and bake at 350 for 15-20 min.

frost with buttercream frosting flavored with root beer extract.

Pink Lemonade cupcakes


Ingredients:
1 box white or yellow cake mix
1/2 c. buttermilk
1/3 c. pink lemonade concentrate
3 lg. eggs
1/3 c. oil
2-3 drops red food coloring

Mix well and bake in cupcake liners at 350 for 15-20 minutes.

Frost with buttercream frosting flavored with lemon and colored pink.  Yum!

Key Lime Cupcakes with Coconut Meringue

CUPCAKES
1 large lime, scrubbed (for 1 teaspoon zest and 2 tablespoons juice)
4 large eggs
1 package (18.25 ounces) plain yellow cake mix
1 package (3.4 ounces) vanilla instant pudding mix
1 1/4 cups water
1/3 cup vegetable oil
1 teaspoon coconut flavoring
FILLING
1 can (14 ounces) sweetened condensed milk
1/3 cup Key lime juice (see "the Cupcake Doctor says" below)
COCONUT MERINGUE
1/4 teaspoon cream of tartar
Reserved 3 large egg whites
1/2 teaspoon coconut flavoring
1/3 cup granulated sugar
1. Place a rack in the center of the oven and preheat the oven to 350 degrees F. Line 24 cupcake cups with paper liners. Set the pans aside.
2. Prepare the cupcake batter: With a citrus zester or fine grater, zest the lime and reserve 1 teaspoon. Cut the lime in half and squeeze the juice over a strainer into a small bowl; you should have 2 tablespoons. Set aside. Separate 3 of the eggs, place the whites in a large clean mixing bowl and the yolks in another mixing bowl.
3. Add the remaining egg, cake mix, pudding mix, water, oil, coconut flavoring and lime zest and juice to the yolks. Blend with an electric mixer on low speed for 30 seconds. Stop the machine and scrape down the sides of the bowl with a rubber spatula. Increase the mixer speed to medium and beat 2 minutes more, scraping down the sides again if needed. The batter should look well blended. Spoon or scoop 1/4 cup batter into each lined cupcake cup, filling it two thirds of the way full. Place the pans in the oven.
4. Bake the cupcakes until they are lightly golden and spring back when lightly pressed with your finger, 18 to 22 minutes. Remove the pans from the oven and place them on wire racks to cool for 5 minutes. Increase the oven heat to 450 degrees F.
5. Run a dinner knife around the edges of the cupcake liners, lift the cupcakes up from the bottoms of the cups using the end of the knife, and pick them out of the cups carefully with your fingertips. Place them on a wire rack to cool for 15 minutes before filling.
6. Meanwhile, prepare the filling: Place the sweetened condensed milk and Key lime juice in a small bowl and stir to combine. Spoon the mixture into a pastry bag fitted with a medium tip. Press the tip 1/4 inch into the top center of each cooked cupcake and squeeze the bag to release about 1 tablespoon filling into the cupcake. Scrape off any excess filling with a rubber spatula. Place the cooled cupcakes nearly side by side on a baking sheet.
7. Prepare the meringue: Add the cream of tartar to the reserved egg whites and beat with an electric mixer on high speed until frothy, 45 seconds. Add the coconut flavoring and 1 tablespoon of the sugar. Continue beating on high, adding 1 tablespoon sugar at a time, until the whites form stiff peaks (if you pull the beaters from the meringue, the meringue should extend from the beaters in straight stiff peaks). Spoon 2 tablespoons meringue onto the top of each cupcake and swirl to spread it just to the edges with a short metal spatula or a spoon. Place the pan in the oven. Bake until the meringue is light nutty brown in color, 5 to 6 minutes. Run a dinner knife around the edges of the cupcake liners, lift the cupcakes up from the bottoms of the cups using the end of the knife, and pick them out of the cups carefully with your fingers. Serve at once, or allow the cupcakes to cool 10 minutes, then serve.
Store these cupcakes, in a cake saver at room temperature, for up to 3 days.

It's important to buy real Key lime juice for this recipe. It has a different flavor from Persian lime juice-it's fresher and more tart tasting. Many supermarkets carry Key lime juice in the juice aisle, so you won't have to visit a specialty store. Once opened, store the bottle in the refrigerator for a month of so. You will have plenty left to make a Key lime pie!
